If you are choosing one yeast, go with this one. Comes in an 11g pack so you will have PLENTY. This will easily make 12 gallons of cider. Often this yeast is used by microbrews for ale. It is fast and hungry. It's reputed to have good flocculating qualities (i.e. sinks and makes clear cider) and does not impart a yeasty aftertaste. A high recommend, if you are not making a bunch of wine that you need the EC-1118 for. This yeast is quite happy fermenting at 55 - 65F so use it in the fall and winter time of the year. If you choose this yeast you will get a nice fruity "draft" ale tasting brew.
