This rennet is a Double Strength microbial "vegetable" rennet that contains no animals products. All ingredients conform to organic standards. Gluten free, non-GMO, no caramel color.
Vegetable rennet is most suitable for cheeses aged less than 6 months.
INGREDIENTS: Water, sodium chloride, acetic acid, sodium acetate, extra heat labile microbial coagulant.
YIELD: 1/4 teaspoon will set up to 2 gallons of milk.
Two ounces contains approximately 12 teaspoons which will set up to 96 gallons of milk.
One pint contains approximately 96 teaspoons which will set up to 768 gallons of milk.
One quart contains approximately 192 teaspoons which will set up to 1536 gallons of milk.
DIRECTIONS: This rennet is DOUBLE STRENGTH PLUS. Start by using 1/3 as much as recipe calls for and adjust as needed. Dilute required amount of rennet in 20 times its volume of cool, potable water. Add immediately into milk and stir for 2 minutes to thoroughly distribute.
STORAGE: Store rennet in refrigerator. Will keep up to 8 months if stored properly.
