Radicchio - Rouge de Verona - Cichorium endiva

Hardy Biennial Rouge de Verona is a classic Italian radicchio in the chicory family. This is a Verona type, originally hailing from that region of Italy. Nicely bitter and spicy leaves become sweeter when cooked; a favorite Italian method is grilling this with olive oil. Raddicchio is a type of chicory so you can roast the roots and add the roots to coffee for a flavorful hot beverage.

Soil & Water: Radicchio does best in well drained, fertile, high organic matter soils with a pH of 5.0-6.8. Water moderately.

Planting & Growing: Plant seeds 1/4" deep in moist soil, either in cells to transplant or direct sow outdoors once soil is at 60°F. Add calcium during the growing season to reduce the risk of tipburn.

Harvesting & Storage: Thin plants to one every 10"-12". Cut the entire heads at the base when 4"-5" across, being careful not to damage the roots. Protect from severe frost and you should be able to grow a second head on the roots. Store as you do lettuce, for up to a week in the refrigerator. To use the roots mince them and then roast them at
