Strawberry-Mint Lemonade

  Strawberry-Mint Lemonade  
   
Three favorite flavors of summer in this tart and refreshing drink.

Servings: 8


Ingredients:

10-12 whole strawberries, sliced thinly
1 handful mint leaves

To make a 2 quart pitcher of lemonade:
Start by muddling (bashing or mashing) the mint in a metal mixing bowl with 1 teaspoon of sugar and 1 teaspoon of lemon juice. Put the mashed mixture in the pitcher.

Add the sliced strawberries to the pitcher and sprinkle on 2 teaspoons of sugar to macerate them (draw out their juices and turn them red all the way through). Stir all together, cover, and chill overnight.

Slow food version:
Juice lemons and add the juice to 7 cups of still or sparkling water. Pour into pitcher, then adjust lemon and sugar to taste.

Quick version:
Pour 7 cups of organic lemonade into the pitcher. Stir.


Directions:

Ladle into glasses filled with ice cubes and serve with an iced tea spoon to scoop up the strawberries.
