Orach - Red - Atriplex hortensis
Hardy Annual Red Orach is also called Mountain Spinach. The magenta-red leaves will not change color when cooked. Use this nutritious green in salads (small, raw leaves) or take the larger leaves and cook them. The flavor is a nuttier version of spinach. Orach grows well in warm weather when spinach bolts.
Soil and Water: Orach wants moderately fertile soil with added organic matter. Provide moderate water.
Planting and Growing: These greens prefer cooler weather, but tolerate warm temperatures. Start seeds indoors 3 weeks before the last frost and continue planting every 2 weeks until midsummer.
Harvesting and Storage: Begin harvesting when leaves are 1" long. Steam larger 3"-4" long leaves. Harvest a few leaves at a time from the whole plant. Mature leaves are popular for floral arrangements.
