Endive - Belgian - Cichorium intybus
Biennial Belgian Endive is a specialty crop you can raise at home, in two stages. Grow the roots like carrots in the summer, then harvest and store the roots and use them to force gourmet "chicons" (4-6 inch heads or buds) for winter salads.
Soil and Water: Use light, deeply tilled soils with plenty of added organic matter, good drainage, a pH range of 6.0-6.6, and regular water. Apply a mulch layer once established to keep roots cool. Sand can be mixed with the soil to promote straight growth.
Planting and Growing: Direct-seed in early spring.
Harvesting and Storage: Near the first fall frost, harvest roots for forcing. Store in damp sand or sawdust at (32°F to 35°F). When ready to force, rebury roots in soil, sand, sawdust or other media and move to dark, cool (50°F to 60°F), humid location with good air circulation. Keep media moist but not too wet. "Chicons" should be ready for harvest in 3 to 4 weeks.
