Planting & Care

Planting: In early spring, start indoors about 8 weeks before outdoor night temperatures are reliably in the 50-55°F range. Sow seeds 1/4" deep and 1" apart in a container of seed starting mix. Keep moist but not soggy, and very warm (75-80°F). Provide a strong light source until seedlings are ready to plant outside. When seedlings are 3" tall, transplant into deeper individual containers, burying stems up to base of leaves. Maintain at 65-70°F. Feed with half-strength fertilizer every 2 weeks until weather is warm enough (50-55°F both day and night) to gradually acclimate seedlings to outdoor conditions. Transplant 3' apart into rich soil in full sun.

Growing: Prepare soil well with aged manure or compost. Plant several inches deeper than seedlings were growing in containers. Provide strong stakes or tall wire cages at planting time. Mulch to provide even moisture retention; don't over-water once fruit begins to ripen.

Harvest & Use: For best flavor, pick tomatoes fully red-ripe and don't store them in the refrigerator. These succulent beefsteak tomatoes are memorable simply cut into thick, meaty slices and sprinkled with a pinch of salt or sugar and good, extra virgin olive oil. Perfect to eat all by themselves or in any kind of sandwich.
