I had never made sauerkraut or other fermented vegetables, but wanted to get started. I read about different types of crocks and the Harsch crock appeared to be the best. Although they cost more than other crocks, I think it was well worth the investment. It is really easy to use. It comes with a two piece weighting stone, which means you don’t have to find the right size plate or wooden board to put on top of the vegetables and then a weight on top of that. Also, I love the moat type water grove on the top of the crock with a lid that makes an air-tight seal. Keeping the air out keeps a slimy film of mold and yeasts from forming on top of the vegetables. The lead free ceramic glaze makes it easy to clean and keeps molds from building up.
