Hardneck seed garlic grows very well in cold regions and some varieties reflect that in the name such as Russian Red or Siberian. The cloves of hardneck garlic are large, full of complex flavor and are easy to peel. Softneck seed garlic grows very well in warmer winter regions, is milder in flavor, and is a great keeper. If you are looking for a very mild and large garlic, try planting some Elephant garlic.

Seed garlic is grown worldwide and many of the names reflect the origins of the stock such as Spanish Roja, German Porcelain, or Carpathian. Some garlic is named after the person who cultivated it, such as Music, named after Al Music, a farmer who introduced the variety to Canada. Garlic wrappers and skins vary in color from pure white, red, purple, or striped purple. Whatever variety you choose, garlic is easy to grow, cost effective (1 pound will yield about 10-12 pounds) and very rewarding, not to mention delicious to cook with.
