Thai Cucumber Relish

  • ¼ cup water
  • ¼ cup sugar
  • ¼ cup distilled white vinegar
  • ¼ tsp kosher salt
  • 2 tbsp finely chopped cilantro
  • ¼ onion, sliced thin
  • 1 small cucumber, quartered lengthwise, seeds removed, and sliced thin


Boil the water, remove from heat, and stir in sugar, vinegar and salt.  Let cool.

Add cilantro, onion, and cucumber.

Drain extra liquid before serving.  This can be served immediately, but the flavor improves if left overnight in the fridge.

Great served in wraps, pita pockets, on a bed of salad greens, or over fresh sliced tomatoes.
