Planting & Care
Soil & Water: Artichokes need rich soil with good tilth and drainage. Add compost months before you plant the seeds, balanced fertilizer just before planting, and nitrogen fertilizer throughout the growing season. Water thoroughly once a week, wetting entire root system.
Planting & Growing: Sow indoors 8-10 weeks before the last frost. Transplant 6-8 week old plants, time the transplanting so plants get 10 days of 50°F nighttime temps, for vernalization to promote budding. Protect from frost. Direct sow: if winter low is above 14°F plant seeds in fall in moist soil and harvest in spring.
Harvesting & Storage: Cut artichokes when the heads are still tight and are 3-5" in diameter, leaving 2" of stem. Side heads will not be as large and can be harvested when they are 2-3" in diameter. Refrigerate up to 3 weeks.
