California Late White is a reliable choice for filling a braid, a storage basket, and the everyday cooking pot. Its familiar white Artichoke bulbs hold 12–16 cloves in overlapping layers, so the harvest supplies both broad slicing cloves and smaller seasoning cloves. Maturing after California Early helps spread out the digging work. Grow it when you want proven softneck performance, classic medium flavor, and very little fuss.
The medium, classic garlic flavor fits sauces, soups, marinades, roasted vegetables, pickles, and everyday sautés. Raw cloves add a clean bite to pesto and dressing; roasting develops sweetness and a smoother aroma. Use larger outer cloves for slicing or whole-clove dishes and reserve small inner cloves for stocks and spice pastes. It is a sensible all-purpose garlic for cooks who value versatility.
When growing California Late White, set the cloves in a sunny fall row with fertile soil that does not puddle. The plants use cool weather and changing day length to form bulbs, then put on most of their size during active spring growth. Water consistently until the tops begin to fade around mid-summer. Lift before the outer skins break down, cure beneath cover, and keep the flexible stems intact for braiding.

What We Guarantee
Our only guarantee is that the seed garlic we sell will germinate, provided you follow the steps listed in our Garlic Planting & Growing Guide. This guarantee is only available to customers who purchase their seed garlic directly from us.
What We Cannot Guarantee
We cannot guarantee that your garlic will remain alive & healthy, or sizes up properly, as there are too many variables beyond our control to be able to do so (i.e. soil preparation, fertilization, weed and pest control, temperature control, irrigation, etc).
How to Request a Credit
If you encounter a significant lack of germination of your garlic (over 50%), please contact us within 45 days of delivery. If we determine that your garlic had a significant lack of germination, we will issue you a credit (not a refund) for the purchase price of your garlic (excluding shipping).* This 45-day time frame is meant to allow you up to 2 weeks to plant your garlic, and up to 4 weeks to check for signs of growth.
(*) We reserve the right to not issue credit for items already replaced. We also reserve the right to require photographic evidence of the lack of germination of your garlic.

My garlic came up quickly after planting out. It is now hunkering down for winter with a nice straw mulch. So far it looks healthy even with the rain and warmer than average temps.
