Fresh Prepared Horseradish

Easy to make your own fresh ground horseradish

 

Ingredients

2 c peeled and cubed horseradish root
3/4 c white vinegar
1/4 tsp salt (to taste)
2 tsp white sugar (optional)
water

Direction

Peel the horseradish and cube. Add the horseradish root to the food processor and add just enough water to process until the root is chopped into small pieces. Let sit for 2 minutes (this supposedly makes a hotter horseradish), then add the vinegar and salt. Process again until the horseradish is a creamy texture. Spoon into an airtight jar and refrigerate. Can store up to a month in the refrigerator, or you can put it in the freezer for up to a year.
