Candied Citrus

  2. In a saucepan, combine 1 cup of sugar, 3/4 cup of water, and 2 tablespoons of lemon juice (for oranges, use orange juice instead).
  3. Heat the mixture on high until it boils, then reduce the heat to a simmer. Add the citrus slices to the pan.
  4. Cook the slices slowly for 45 minutes to an hour, turning them occasionally, until the liquid is absorbed.
  5. Lay the candied slices on parchment paper to cool, then refrigerate for two hours before storing in layers of parchment in an airtight container. They’ll keep in the fridge for up to two months.

Salt-Preserved Lemons

Salt-preserved lemons are a cornerstone of North African and Asian cuisine. Follow these steps to make your own:

  1. Wash and sterilize your jars. Cut the ends off each lemon, then slice them into quarters, leaving the base attached.
  2. Sprinkle a tablespoon of kosher salt into each lemon and pack them tightly into the jar.
  3. Press down firmly to release juices. Add a few drops of lemon juice if needed to cover the lemons.
  4. Seal the jar and store it in a cool, dark place for three days, turning it occasionally. After three days, top off the jar with more lemon juice and reseal. Let it sit for another month before using.
