Grilled Summer Squash With Garlic & Herb Marinade

This quick summer recipe serves about four and works with zucchini, yellow squash, or pattypan squash.

Ingredients

  • 4 garlic cloves, minced
  • Pinch of fine salt
  • ¼ cup olive oil
  • Fresh herbs, minced
  • Summer squash

Directions

  1. Combine the garlic and salt in a small bowl and let the mixture rest for a few minutes.
  2. Stir in the olive oil and herbs.
  3. Cut the squash into broad ¼-inch slices and brush both sides with the marinade.
  4. Grill about 3 minutes per side, or until tender with lightly charred edges.
