  • Double boiler or saucepan
  • Heat-proof, sterilized jars with lids
  • Dehydrator (for incubating the yogurt)

Step-by-Step Instructions

1. Sterilize Your Tools and Surfaces

Clean your hands, utensils, and work surfaces with hot, soapy water. Proper sterilization ensures your yogurt is safe and free of contaminants.

2. Mix the Milk

Combine the powdered milk (if using) with the liquid milk. This step is optional but enhances the creaminess of your yogurt.

3. Heat the Milk

Pour the milk mixture into a double boiler or a saucepan. Heat the milk to 195°F, stirring constantly to avoid burning. Maintain the temperature between 180°F and 200°F for 10 minutes, but don’t let the milk boil.

4. Cool the Milk

Remove the milk from heat and cool it in a bowl of cold water until it reaches 120°F. Don’t let it drop below 110°F.

5. Add Yogurt Starter

In a small bowl, mix 1/4 cup of the cooled milk with 1/4 cup of plain yogurt. Stir thoroughly, then combine this mixture with the remaining milk.

6. Pour into Jars

Pour the mixture into sterilized, heat-proof jars. Secure the lids tightly.

7. Incubate

Place the jars in a dehydrator set to 115°F. This keeps the temperature stable and helps the yogurt set. Allow the yogurt to incubate for about 3 hours. Check every 15 minutes if it hasn’t set by then.

8. Enjoy!

Once set, your yogurt is ready to eat! Customize it with your favorite organic fruits, preserves, or granola for a delicious treat.

  • For the best yogurt, use the freshest milk possible, and avoid ultra-pasteurized milk.
