Biennial grown as an annual Heirloom. Shanghai is the most popular Baby Pak Choi, for its flavor and tenderness. Vase-shaped heads grow quickly with juicy dark green leaves and pale green ribs. Heat tolerant but it will bolt in summer heat, or if the temperature drops below 50°F for a week.

Yummy baby Bok Choy

I first ate this flavorful and healthy green when living in China about 40 years ago and grew these Peaceful Valley seeds in my garden last year. They were a huge success, prolific, tasty, and resilient. It can get very hot during the day and very cold at night in the Zuni Mountains, NM where I live and these greens did very well. I thinned by harvesting the smaller, more crowded plants to eat in salads. The flower heads are also quite delicious, so I let some bolt and flower. New shoots will form when one cuts the flower stalk, so you can enjoy over and over again.

I love Chinese food! And that's what these pak choys are great for. I sowed the seeds in the raised bed with my other cold weather leafy greens, the seeds sprouted quickly, I didn't thin them out, I'm pretty sure I had 100% sprout rate, just let it grow to around 10" tall, harvest the big ones every day, very delicious and tender.
