Covington Sweet Potato

Covington sweet potato is a widely grown North Carolina variety valued for uniform roots, dependable yields, and moist orange flesh. Released by NC State University in 2005, Covington became a leading fresh-market sweet potato because its blocky roots grade consistently, handle harvest and shipping well, and deliver the smooth, sweet flavor gardeners expect. The light rose skin may fade during storage, while the orange flesh remains an excellent choice for roasting, baking, mashing, and casseroles.

Grow Covington in full sun after frost danger has passed and the soil has warmed. Loose, well-drained soil helps roots develop an even shape; planting into cold soil can produce shorter roots and slow establishment. Allow approximately 100–115 frost-free days for maturity. Each order contains one whole sweet potato for producing slips, and a healthy root can generate a dozen or more plants. Cure the harvested sweet potatoes before storage to deepen flavor and extend keeping quality.
