Georgian Fire seed garlic is a Porcelain hardneck from the Cichisdzhvari region of the Republic of Georgia, an area represented in late twentieth-century garlic collections. Its North American popularity reflects the renewed exchange of Caucasus garlic germplasm among growers and seed savers. The variety is prized for large cloves, pale wrappers, edible scapes, and distinctly fiery raw flavor.

Georgian Fire is for growers who want a garlic with real spark. The sturdy plants finish with creamy bulbs holding 5–9 substantial cloves, often touched with rose or purple inside. Its scapes arrive as an early seasonal treat, but the main event is the intense raw heat that makes this variety stand out in a tasting. Plant it as a bold counterpart to mellow softnecks or balanced Porcelains.
This is a strong garlic for cooks who want unmistakable heat. Finely minced raw cloves add intensity to salsa, pesto, dressings, and spicy condiments. Roasting and long cooking soften the sharp edge while preserving a deep, lingering garlic flavor for soups, stews, braises, and spreads. The generous cloves are easy to peel and convenient whenever a recipe calls for more than a token amount of garlic.
When growing Georgian Fire, choose a cold-winter site with full sun and soil that sheds excess moisture. Plant the cloves in fall, then support the strong Porcelain growth with steady water once spring arrives. Pick the scapes while tender, especially when large bulbs are the goal. Around mid-summer, dig after several lower leaves have browned, keeping enough intact wrappers for protection, and cure the harvest in a dry place away from direct sun.

What We Guarantee
Our only guarantee is that the seed garlic we sell will germinate, provided you follow the steps listed in our Garlic Planting & Growing Guide. This guarantee is only available to customers who purchase their seed garlic directly from us.
What We Cannot Guarantee
We cannot guarantee that your garlic will remain alive & healthy, or sizes up properly, as there are too many variables beyond our control to be able to do so (i.e. soil preparation, fertilization, weed and pest control, temperature control, irrigation, etc).
How to Request a Credit
If you encounter a significant lack of germination of your garlic (over 50%), please contact us within 45 days of delivery. If we determine that your garlic had a significant lack of germination, we will issue you a credit (not a refund) for the purchase price of your garlic (excluding shipping).* This 45-day time frame is meant to allow you up to 2 weeks to plant your garlic, and up to 4 weeks to check for signs of growth.
(*) We reserve the right to not issue credit for items already replaced. We also reserve the right to require photographic evidence of the lack of germination of your garlic.

Bulbs were large and in good condition- and have sprouted
I ordered a pound of organic Georgian Fire garlic, and they gifted me a pound of organic French Red Shallots. My order arrived within 3 days. The garlic bulbs were the size of a baby's fist, and the Shallots even bigger. The bulbs were beautiful- plump, vibrant in color, and completely unblemished. Can't wait to harvest next year! Always so good. Delivered quickly and growing rapidly. Only complaint is that 1 1/2 of the bulbs were mushy soft and unusable. Didn’t bother calling as it isn’t worth the hassle
