How to Grow Peppers: Soil, Fertilizer, Planting, and Care

Peppers need a long, warm growing period, strong light, consistent water, and fertility matched to the soil. Start with the variety and climate: a compact sweet pepper, large bell, jalapeño, and long-season hot pepper can differ in maturity, plant habit, heat, and harvest stage.

Choose pepper varieties

  • Sweet peppers: include bells, frying, roasting, and small snacking types.
  • Hot peppers: heat depends on genetics, fruit maturity, and growing conditions; a named variety's range is not an exact result for every fruit.
  • Early varieties: useful where the warm season is short.
  • Compact plants: can be easier to manage in large containers.
  • Specific resistance traits: may reduce risk from listed diseases but do not create immunity.

Start pepper seeds indoors

Peppers are commonly started seven to ten weeks before a suitable outdoor transplant date. Use clean containers and seed-starting medium. Maintain the packet's warm germination range, keep media evenly moist, and provide strong light immediately after emergence. A heat mat can help in a cool room, but monitor the medium and adjust heat after emergence.

Use the frost-date seed-starting calendar and soil-temperature chart. Find trays and media in seed-starting supplies.

Harden and transplant

Transplant after frost danger when soil and nighttime conditions are suitable for a warm-season crop. Harden seedlings gradually. Choose full sun, and space the variety according to its mature habit; around 18 inches between plants is common, but packet guidance should control. Avoid damaging roots and water the root ball at planting.

Best fertilizer for peppers: begin with a soil test

The best fertilizer program is the one that corrects a measured need without creating excess. Test the soil before planting, review pH and nutrient recommendations, and account for compost and previous amendments. Excess nitrogen can produce vigorous foliage without proportionate fruiting, while nutrient deficiencies cannot be diagnosed reliably from one symptom or photograph.

Before planting

  • Correct pH only when a soil test supports it.
  • Incorporate recommended nutrients uniformly into the bed.
  • Use finished compost as a soil amendment, not as proof that no other nutrient planning is needed.
  • Avoid placing concentrated fertilizer against roots or stems.

During the season

Side-dress only when soil conditions, plant growth, and the product label justify it. Irrigate after a granular application when directed. In containers, use a complete fertilizer formulated for container crops and follow its measured rate because nutrients can leach and salts can accumulate.

Water and mulch

Keep moisture reasonably consistent during flowering and fruit development. Drip irrigation can deliver water near the root zone while keeping foliage drier, but runtime must be adjusted for soil, weather, plant size, and emitter output. Mulch after the soil has warmed to moderate moisture loss and soil-temperature swings.

Flowering and fruit set

High heat, cool nights, water stress, transplant stress, and excess nitrogen can contribute to blossom drop or poor fruit set. Diagnose the timing and environment before adding fertilizer. Peppers are generally self-pollinating, although wind and insect movement can assist pollen transfer.

Common pepper problems

  • Purple or dark seedlings: can reflect variety, cool conditions, nutrient availability, or stress; inspect the whole plant and root environment.
  • Blossom-end rot: relates to calcium movement within developing fruit and is often associated with irregular water; adding calcium without evidence may not solve it.
  • Sunscald: exposed fruit can develop damaged patches after abrupt intense sun or leaf loss.
  • Aphids and mites: identify the pest and begin with cultural or physical controls where practical.
  • Leaf spots or wilting: avoid diagnosing from symptoms alone; use local extension or a plant clinic when the cause is uncertain.

Harvest

Many peppers can be harvested green or allowed to mature to their final color. Flavor, sweetness, texture, and heat can change with maturity. Cut rather than tearing fruit from brittle branches. Wear gloves and avoid touching eyes when handling hot peppers.

Containers, support, and pruning

Use a large container with drainage and a potting mix intended for containers. Small pots dry quickly, restrict roots, and make fertilizer concentration harder to manage. Stake or cage plants before branches carry heavy fruit. Peppers do not require routine heavy pruning; removing damaged material and maintaining access is generally safer than copying a pruning system designed for indeterminate tomatoes.

MomTome, are your peppers getting enough water? They should not be soft and not turning brown (at least scotch bonnets). Do they have enough leaf cover to protect the fruit from sun scald? Does your plant look healthy? Your peppers should not be soft and there may be a problem, but really hard to diagnose. Try mulching around your peppers as well to help keep the soil moist.

I have a scotch bonnet plant purchased at a local nursery. It has lots of firm, green fruit on it but now some of the largest ones have started changing to a brownish color and getting pretty soft. I cut the first one off because I thought it was diseased. I left a couple on the plant and they have turned bright red and have firmed up somewhat but they’re still softer than I am used to. I have not been gardening long (this is my first pepper harvest ever!) but I have jalapeno and bell peppers (grown from seed) also that are firm throughout the maturing and harvest so I wasn’t sure if the plant is messed up or if this is normal. Any help will be appreciated. Thanks.
