Annual Red Amaranth variety grows beautiful red-striped edible leaves for fresh and cooked uses. This is a favorite leafy vegetable in Chinese and Vietnamese stir-fries and the red amaranth leaves will color the dish red. Unlike many other greens, such as mustard and spinach, amaranth red loves the heat so when your cool weather greens are done heat loving red amaranth will keep you well supplied with tasty, highly nutritious greens. Grow this for the bright leaves or as a nutritious, rice-like grain. Amaranth seeds are also edible and are a protein-rich, gluten free, pseudo grain. This flowering plant can also be use as an ornamental plant with its beautiful red amaranth leaves.

Planting & Care

Soil and Water: Amaranth likes loam and silty loam soil. It is very drought tolerant so water only when dry.

Planting and Growing: Direct seed after soil has begun to warm in spring. The red amaranth seed is very fine so you can mix it with a carrier like sand or coffee grounds. Scatter the seed and rake it in lightly.

Harvesting and Storage: For red amaranth, harvest before flowers appear. You can harvest the entire plant. For seeds harvest after flowers have turned to seed, by cutting the stalk and letting it cure for a few days in a sunny location. Bring it in at night to avoid moisture. Once dried, shake into a paper bag and filter with a sieve.

The noble Amaranth

This humble plant is considered a weed, called rough pigweed, by some. The fact is it was known as The Sacred Food of the Aztecs in rural Mexico.* Amaranth is supposed to be higher in Iron than any known vegetable except maybe Parsley.* It has a comparable amount of vitamin A, is full of more protein and has a higher dose of vitamin C than the cultivated beet.*

I bought all four varieties that were in stock and planted them right away! They've only just sprouted, but I'm excited!! The nutritious possibilities!!!

Productive and tasty!

First time growing amaranth, and it was the easy and productive. Leaves are tasty raw or cooked, and stalks are like celery (main stalk can be peeled if too tough for you). Bugs left it alone (!!!) and it withstands central FL heat (100 degrees). LOVE IT!!! Highly recommended.

Grew like a beast

Harvested lots of young leaves at first, then let it grow. Gets nice and tall and gorgeous looking with no extra water. Beautiful versatile plant.

Amazing!

Did incredigly well in our punishing heat and drought here in inland SoCal. The seed actually seemed to have a mix of 20% taller, burgundy-colored amaranth and 80% slightly shorter plant that was mostly green with red streaking. Both germinated exceptionally quickly and grew like gangbusters with a minimum amount of supplementary irrigation. Just harvested more leaves than I could hold, and left many more on the plant because we've never even amaranth greens before so I don't yet know if we'll like it or not. If we do, I will definitely grow this again!
