Organic Romanian Red Garlic
Harvest hot, pungent red garlic.
Organic Romanian Red Garlic is a bold and flavorful hardneck variety known for its intense heat and strong garlic aroma. A favorite among garlic enthusiasts, this garlic delivers a powerful punch that mellows slightly when roasted, making it a versatile addition to both raw and cooked dishes. Each bulb contains 5 to 8 large, plump cloves with creamy white skins and a vibrant, spicy bite.
This variety thrives in colder climates and performs best when planted in the fall and harvested in mid to late summer. It prefers well-drained, fertile soils and offers consistent yields of large, uniform bulbs. Gardeners value its hardiness and disease resistance, as well as its ability to store for long periods without losing flavor or texture.

Flavor and Aroma Profile
-
Flavor Profile: It is prized for its strong, robust flavor with a fiery heat that mellows slightly when cooked. This Porcelain hardneck variety is known for its full-bodied garlic essence, offering a bold and spicy taste when raw that transforms into a rich, smooth flavor when roasted. It’s highly valued by garlic connoisseurs for its intensity and is perfect for hearty dishes, roasts, and bold sauces where its presence can truly shine.
-
Aroma Profile: When crushed or chopped, it releases a potent, pungent aroma with earthy and sulfurous undertones. The aroma is sharp and invigorating in raw form, lending itself well to flavorful marinades, garlic-heavy dips, and savory spreads. During cooking, it softens into a deeply aromatic scent that enhances stews, stir-fries, and roasted vegetables.
Planting Time
It is typically planted in the fall for a summer harvest, similar to other hardneck garlic varieties. Planting in the fall allows the cloves to establish roots before winter sets in, leading to healthier plants and larger bulbs.
Scaping
Hardneck garlic varieties like this garlic produce scapes, curly flower stalks that emerge from the center of the plant. While the scapes are edible and delicious, their removal redirects energy to bulb development, resulting in larger cloves. Harvest scapes when they curl once or twice and use them in culinary dishes like pesto or stir-fries.

Storage and Preservation
How to Store Fresh Garlic
After harvesting in early to midsummer, allow the green tops to fully dry and turn brown to ensure proper curing. Hang the hardneck bulbs in a cool, dry, and well-ventilated space to cure and help maintain their strong flavor and nutritional value. This garlic stores excellently for several months, making it a great option for both raw and roasted culinary applications.
Preserving Garlic for Long-Term Use
To maximize the storage life, harvest the bulbs once the foliage has completely browned and the cloves are mature. Cure the garlic in a dry, breezy area to preserve its bold aroma and healthful compounds.
Best Practices for Drying and Freezing
Freezing garlic after curing helps to preserve its flavor and quality for even longer periods. You can freeze garlic in different forms, such as whole bulbs, individual cloves (peeled or unpeeled), or as minced garlic, depending on your future needs. While you can freeze freshly harvested garlic that isn't cured, it's generally not recommended. The moisture content in uncured, freshly harvested garlic can lead to a mushy texture after thawing. The flavor may also not be as pronounced.
