Blueberry Oat Muffins

Easy to make and super tasty!

Ingredients


  • 2 cups ground oats

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 1 teaspoon baking soda

  • 2 1/2 teaspoon baking powder

  • 2 eggs separated

  • 1/2 cup sugar

  • 2 tablespoons canola or olive oil

  • 1 teaspoon vanilla

  • 1 cup plain yogurt

  • 1 cup homemade Gravenstein applesauce

  • 1 cup chopped pecans, walnuts or almonds

  • 1 cup fresh or frozen blueberries

Direction

Mix all the dry ingredients together and set aside. Separate egg yolk and whites. Whip egg whites to peaks and set aside. Place the following ingredients in a mixing bowl: oil, vanilla, yogurt, applesauce, egg yolks. Add the sugar and mix well. Slowly add the dry mixture and continue mixing. Add blueberries and nuts. Fold in the whipped egg whites. Put in 12-14 muffin cups and bake in a 350 degree oven for 22 minutes.
